Luz Helena Salazar - Castillo ef2

One offering we are super excited to present to the Las Vegas/Henderson coffee community is this Colombian Castillo from our producer friend, Helena Salazar, that we’ve sourced through our new importing partners Cofinet.

Cofinet is an organization formed by Helena’s sons Felipe and Carlos. Based out of Colombia, they specialize in alternative fermentation processes that are new to the country. At their processing center La Pradera the most exotic varieties are processed to achieve unique profiles that are considered “unknown” compared to more traditional cups coming out of Colombia

Working with her sons, Felipe assisting with fermentation processes, and Carlos helping to establish client-producer relations, Helena has produced a beautiful extra 2 day fermentation(EF2) coffee. In the cup we get a rich raw cacao, the subtle tropical flavors of dragon fruit and mango, and a beautiful lime based acidity. When we asked what made her coffee special, Helena replied simply:

Their aim is to encourage direct and lasting relationships between farmers at origin and roasters around the world, who pride themselves in creating these in sustainable and ethical ways! Not only are we excited to present our community the amazing flavors in this cup, but also to be a part of such an exciting and respectable partnership. This particular offering comes from the second smallest department of Colombia, Quindio, which represents only 0.2% of the country’s territory. Quindio is located in the center of a triangle formed by Colombia’s three major cities, Cali,  Bogotá, and Medellín. It’s known for absolutely benign weather, as well as the exquisite quality coffee this weather produces! We hope you enjoy this coffee as much as we have roasting, cupping, and dialing it in.
